The solution was simple. Checking in the data folder I saw the .erlang.cookie was of size zero:
# ls -al /var/lib/rabbitmq

Simply remove the cookie file and start rabbitmq-server again and it succeeds.
# rm /var/lib/rabbitmq/.erlang.cookie
